TOMATO, RED ONION AND FETA TART



A simple,healthy (besides the pastry) and delicious alternative to pizza. Serve with a salad, steamed asparagus or anything really!

1.Thinly slice 3 red onions and place in a pan with a little sugar and butter. Cook on a low heat until softened and slightly caramelized. 
3. Slice a mix of tomatoes (I like Roma) in half and roast with olive oil and sliced garlic at 200 degrees for 20 minutes. 
3. Top a sheet of ready rolled puff pastry with onions, roasted tomatoes and crumbled feta. Fold up edges slightly. Cook for 35 - 40 mins until the pastry is browned and crispy. Sprinkle with fresh basil.
