Inspired after watching Donna Hay on our flight back to SA, I made these delicious potato wedges last night.

In a medium sized bowl combine a tablespoon of paprika, half a tablespoon of mixed herbs, half a teaspoon of salt and a few grinds of black pepper. Add two tablespoons of extra-virgin olive oil to the herbs and spice mix to make a paste.
Slice two large potatoes (to serve two people), leaving the skins on. Toss the potatoes with the paprika and olive oil paste.

After the potatoes are well coated, place on a large baking tray and bake at 180 degrees for 40 to 45 minutes (or until brown and crispy).

Serve them with grilled fish, rocket, fresh lemon and a dollop of Hellmans Mayo.
