This is one of my favourite things to make on a Sunday morning. It's a little bit indulgent but as it's overcast today, this type of breakfast automatically becomes justifiable!

Today I used the crumpet recipe from Apples for Jam, a great home-style cook book.

Here are steps:
1. Whisk together 1 tablespoon sugar, 1 egg, a few drops of vanilla until foamy. There is nothing quite like the smell of egg, sugar and vanilla - yum! Whisk in 20g melted butter then add 1 cup of plain flour and 1 teaspoon of baking powder. Pour in half a cup of milk and whisk together to make a smooth, thick batter. Ok, so the batter is good to go!

2. Now fry the bacon (streaky is better) until crispy. Slice banana and put aside.

3. Heat a non-stick frying pan and pop in a little bit of butter, so that the base is coated. Drop tablespoons of batter in the pan. One tablespoon = one crumpet. When bubbles start to appear and pop on the surface, flip the crumpets over and fry until golden brown.

4. Top the hot crumpets with the bacon, banana slices and then drizzle with maple syrup. Serve immediately!
